UAcre Taste, Culture and HealthAt — CSUF - College of Humanities & Social Science
This internship will focus on the cultural and taste aspects of healthy eating. Ms. Rinda will be researching the nutritional content of specific crops and dishes that can be made with them and working to help develop menu items that make use of heirloom crops grown on the campus farm. This internship is part of her food studies minor, and is designed to also complement her Public Health major emphasis on health promotion and nutriton.
Learning Outcomes
Identify the nutritional and cultural uses of heirloom crops
understand their growing habits and productivity on the farm
describe their uses in recipes and cuisine
research the taste preferences of potential restaurant customers
Training
supervise the student's work on the farm (in coordination with Dr. Johnson)
guide the student's research process in culinary and nutritional uses of these crops
guide the student's research into potential customer tastes
Tasks/Duties
meeting with and corresponding with faculty mentors
working with UAcre students at the farm on growing habits and productivity of crops
creating a written record of her research
