We’re offering an exciting opportunity for students passionate about functional foods, nutraceuticals, and the incredible world of fungi. As a Mycology R&D & Commercialization Intern, you’ll explore how medicinal mushrooms and fungal compounds can support human health, immunity, and wellness. Get hands-on experience in the lab, assist with product research, and learn how fungi are shaping the future of food as medicine. You’ll gain exposure to product development, food safety, sensory evaluation, and regulatory compliance in the mushroom industry.

Essential Duties and Responsibilities Supporting the Commercialization of our products Formulization Bi-Weekly Sensory Evaluation of Trial Products Blending Trial Products for Clients Supporting Biomass Conversion and Supplementation Projects Microscopy & Imaging Analysis Data Collection and Statistical Analysis Other Projects DNA Processing, PCR & Mating Type Analysis Sterile Tissue Culture in the Mycology Lab Essential Skills: Accurate data collection and recording (clear experimental notes, observations) Statistical analysis (basic understanding for evaluating trial results) Laboratory Skills Basic lab techniques (pipetting, sterile technique, sample preparation) Microscopy and imaging analysis (using microscopes, imaging software like ImageJ, AmScope, Nikon Elements) DNA processing skills (PCR, mating type analysis) Sterile tissue culture experience Plus Familiarity with:Incubators Dehydrators Mill and sifter Weight scales Microscopes Technical Competencies Laboratory Techniques: Understanding and proper use of basic lab procedures (e.g., pipetting, sample preparation, sterile hood techniques, microscopy, etc.) Instrumentation: Familiarity with and ability to operate lab equipment such as incubators, dehydrators, mill, sifter, weight scales, microscopes, ImageJ, AmScope. Data Collection & Recording: Accurate and consistent documentation of experimental procedures, results, and observations. Basic computer skills are required. Scientific Knowledge: Foundational understanding of the scientific principles relevant to the field of Mycology. Safety & Compliance: Knowledge and adherence to food and lab safety protocols, proper handling of hazardous materials, and understanding of regulatory standards. Qualifications Having a blend of general lab skills and basic knowledge related to fungi is a benefit but not a requirement. Educational Background Currently pursuing or recently completed a degree in Biology, Microbiology, Mycology, Botany, Plant Sciences, Environmental Science, Food Science, or a related field. Completed coursework in microbiology, fungal biology, ecology, food science, or plant pathology is a plus.

Opportunity Training 

Students will receive SOP-regulated training based on the activities they will participate in. This may include working on a microscope, using imaging tools such as ImageJ, using mills, grinders, or sifters in the food lab, working with sterile instruments in a hood, working with small autoclaves, working with fungal cultures,

Additional risk specific to this opportunity 

For microbiological activities, the student may be required to sterilize tools in the fungi culture lab using sharp objects, hot autoclaves, and hot ceramic tool sterilizers.
