At the end of the internship, students will learn… By the conclusion of the internship at Haliburton International Foods, students will demonstrate applied knowledge in food science, microbiology, and food safety systems within a commercial food manufacturing setting. Learning outcomes include the ability to conduct microbiological testing, apply Good Manufacturing Practices (GMP) and Hazard Analysis and Critical Control Points (HACCP) principles, and interpret analytical results such as pH, Brix, and viscosity. Students will gain experience in product formulation, sensory evaluation, and quality assurance documentation, while understanding how laboratory data supports large-scale production. Emphasis will also be placed on regulatory compliance, cross-functional communication, and problem-solving. By the end of the internship, students will have developed the technical, analytical, and professional competencies necessary for success in food manufacturing, research, and quality assurance roles.
Training & Supervision Summary The intern will gain hands-on experience in food science and microbiology while supporting the Food Safety & Quality (FSQ) team at Haliburton International Foods. Training Includes: -Learning how to perform microbial sampling, plating, and environmental monitoring -Assisting with product formulation, sensory testing, and analytical procedures (pH, Brix, viscosity, etc.) -Gaining exposure to food safety systems such as GMP, HACCP, and SQF -Practicing lab safety, aseptic techniques, and accurate data recording -Observing how microbiology and food science connect to real-world food manufacturing and quality assurance -Collaborating with Food Science, R&D, Operations, and Sanitation teams Supervision: -Intern will be mentored by Food Scientists and FSQ Managers -Will receive daily guidance, regular progress check-ins, and a final performance evaluation -Emphasis on developing technical, analytical, and professional skills to support future careers in food science and microbiology
Interns will receive comprehensive safety orientation and training upon starting, including instruction on Good Manufacturing Practices (GMP), personal protective equipment (PPE) use, and proper lab and sanitation protocols. All activities will follow FDA, USDA, and company safety standards to ensure a safe working environment in both lab and production areas. Interns will be supervised at all times while handling food samples, chemicals, or equipment and are required to follow all safety and hygiene procedures established by Haliburton International Foods.
